We brewed a beer using Hepburn Springs water, so we took a very different approach to our normal recipe development and allowed the water to decide what beer we would brew. The high bicarbonate level in the water, made us look to the UK for inspiration and we settled on an E.S.B. or Extra Special Bitter. We used Ale, Wheat and Crystal malts for complexity, London Ale yeast and 3 traditional English hops: First Gold, Bramling Cross and East Kent Golding.

Hopburn Springs E.S.B. is brilliant copper in colour, it is full bodied with robust malt notes and it is lightly floral and perfumed, like an English garden. 5.8% ABV.
